Easy Mini Summer Fruit Tarts
Summer calls for fresh fruits and fresh fruit tarts! To celebrate warmer weather and delicious summer produce, we wanted to feature @audacious_eats’s mini fruit tart recipe. Imagine a crumbly sugar cookie crust topped with cream cheese whipped cream, fresh berries and lemon glaze. Mouthwatering, right? Even though this recipe seems time consuming, it’s actually really easy because we use Miss Jones Organic Sugar Cookie Mix to make our crusts.

- Yield: 9 4-inch tarts
— 1 box Miss Jones Organic Sugar Cookie Mix
— 1 egg
— 6 tablespoons softened butter
— ¼ cup heavy whipping cream
— 6 oz softened cream cheese
— ½ teaspoon vanilla
— ⅓ cup + 3 tablespoons powdered sugar
— 1 tablespoon lemon juice
— 3 tablespoons powdered sugar
- Preheat oven to 350 degrees F. Make sugar cookie mix as directed. Scoop three tablespoons cookie dough into each mini tart pan. Using your hands, smooth and flatten dough, making sure to come up the sides. Poke the bottom with a fork 3 times. Bake for 11-12 minutes. Let cool.
- Time to make your filling! Using the whisk attachment on an electric mixer, beat heavy cream until whipped. Set aside in a separate bowl. In the same mixer, beat the cream cheese, powdered sugar and vanilla until smooth, about a minute. Fold in the whipped cream until filling is smooth and creamy.
- In a small bowl, whisk the lemon juice and powdered sugar until smooth.
- Assemble the tarts by filling each tart with a heaping tablespoon of filling, some berries and a drizzle of lemon glaze. Dust with powdered sugar. Enjoy!
